Kilishi, a celebrated delicacy originating from Northern Nigeria, is crafted by thinly slicing lean beef and infusing it in a spiced paste called labu, made from powdered groundnut cake (kuli-kuli), ginger, garlic, and chili. After absorbing the marinade, the meat strips are dried under the Sahelian sun and briefly roasted over glowing embers, producing a crisp, savory, and intensely aromatic dried meat snack.
